Many people are a little intimidated by cuts of pork because they are lean and often overcooked. Try this recipe for pork chops seared in a cast iron pan. Seasoning the pork for 15 minutes is the key to a nice crust on your chops and to retain moisture. And chops on the bone are always more flavorsome and juicy.
Prep Time: 30 Minutes
Cook Time: 8-10 Minutes
Yield: 4 Pork Chops
2 garlic cloves, smashed
1 tablespoon thyme, chopped
2 oz butter
1 tablespoon extra virgin olive oil
½ tablespoon salt
Remove the pork chops from the fridge 30 min before cooking to come to room temperature
Season the meat for 15 minutes prior to cooking
Put the oil in a cast iron pan and get the pan hot. Add the chops and leave them alone for 3-5 minutes before flipping
Turn them over and cook for another 3-5 minutes
Cut the heat and add the garlic, thyme and butter
Tilt the pan and baste the meat for a couple of minutes
