Pasture Raised Lamb and Feta Meatball


Lamb has a compelling earthy taste that's nicely matched with a creamy feta, making a delicious meatball option. Serve these with [jalapeno_yoghurt_sauce] alongside.

Yield: 12 ea, 3 oz Meatballs

INGREDIENTS

2 lb Ground Lamb

4 oz feta cheese, crumbled

½ yellow onion, finely diced

½ bunch cilantro, finely chopped

1 tablespoon garlic, finely chopped

½ tablespoon garlic powder

½ tablespoon onion powder

½ tablespoon paprika

½ tablespoon cumin, ground

½ tablespoon kosher salt

PREPARATION

Saute the onions on medium heat until soft and slightly brown around the edges

Add the garlic and cook for one more minute. Remove from the heat

In a separate dry pan, lightly toast the ground spices until fragrant. Be careful not to burn the spices!

Once cool, add to a large mixing bowl with all of the other ingredients and combine until fully incorporated

Marinate overnight or form your meatballs right now

Form 3oz meatballs, about 3/4" thick, and sear in a hot pan for about 3 minutes each side

The lamb will be cooked when it reaches an internal temperature of 145 degrees Fahrenheit

TIPS

I recommend tasting your first cooked burger for seasoning prior to cooking all of the mixture.

These lamb meatballs can be flattened and cooked on the grill or baked in the oven.
